Tapioca pearl pudding anyone?? This one is a must have after every special occasion Indian meal, at least that is how it is in Indonesia. But I wouldn’t wait for that special occasion to happen to have this sweet, creamy and tasty pudding, as I could eat it everyday. I can go on and on about it. This particular tapioca pearl pudding recipe is originally from India, however it is made differently in Indonesia.
Following the Indian recipe, we’ll be making this using fresh milk. But if you follow my recipe we’ll be making this using coconut milk which I prefer more because of the coconut flavor. Yum!
This recipe is super simple, and easy to make, doesn’t take a lot of ingredients in the making as well. I must mention this is also fast to prepare, these tapioca pearl soaking time will take around 30 minutes.
ArrayLike almost every food, there’s always pros and cons. From how I described it I believe you can already imagine how good it is, on the other side there is the cons to it, that it is starch and there is little to no nutrients in it whatsoever except high carbs and very low proteins, vitamins or mineral. With that being said I think by now you can tell how honest I am 😀
Now lets find out how to make this sweet, tasty pudding!
Tapioca Pearl Pudding
Ingredients
- 1 cup tapioca pearl
- 3 pods cardamom
- ⅓ cup sugar
- ¼ cup condensed milk
- 1 can coconut milk
- ¼ cup raisins
- ¼ cup corn
- ½ cup water
- ¼ tsp salt
Instructions
- Soak 1 cup of tapioca pearl in regular water for 1 hour. Make sure the pearl submerge under water, then discard the water
- Over medium flame cook the coconut milk and the cardamom pods in a pot.
- Once the milk comes to a boil add the tapioca pearls, stir and keep it over medium flame for a few minutes until the tapioca is soft. Add salt, sugar, whole corn kernels, raisins and condensed milk. Mix until they are well combined.
- When they are well combined and if it thickened up you can add 1/2 cup water but I like it thick (it supposed to be thick)
- Let it come to a boil just one more time and turn the flame off!
- Your tasty tapioca pudding is ready to be served!
